Ginger Coconut Date Pudding
- 225g flour
- 55g coconut
- 55g sugar
- 1 tsp ginger
- 1 egg
- 115 butter
- 1 large tbsp MALTEXO ORIGINAL
- 4 tbsp milk
- ½ tsp baking soda
- ½ cup chopped dates
Method:
Cream butter and sugar, add egg and MALTEXO ORIGINAL, beat well. Mix coconut, ginger and flour together, stir gradually into creamed mixture. Dissolve soda in the warmed milk, add. Lastly add chopped dates. Turn mixture into a well greased pudding basin.
Steam for 3 ½ hours.
